Georges Mediterranean, located on Sydney's vibrant King Street Wharf, is seeking an experienced Head Chef with a deep understanding and passion for authentic Greek–Mediterranean cuisine.

We're looking for a culinary leader who knows how to craft rustic, soulful food — the kind that reminds guests of a sun-soaked Greek taverna. Think charcoal-grilled seafood, hand-rolled filo, slow-braised lamb, and vibrant mezze shared among friends. If you have a strong background in traditional Greek or Mediterranean kitchens and the creativity to elevate those flavours with modern presentation, this is your opportunity to take ownership of an iconic Sydney restaurant.

The Role

  • Lead and manage all kitchen operations, ensuring quality, consistency, and authenticity.
  • Design and execute menus that celebrate traditional Greek–Mediterranean cuisine with a rustic, taverna-inspired edge.
  • Maintain high culinary standards while driving innovation, efficiency, and profitability.
  • Source the finest local and seasonal ingredients to create vibrant, flavorful dishes.
  • Manage supplier relationships, purchasing, and cost control with attention to detail.
  • Inspire, mentor, and train a skilled kitchen brigade to deliver excellence at every service.
  • Collaborate with the Executive team on menu evolution, event planning, and operational strategy.

About You

  • Proven experience as a Head Chef or Senior Sous Chef specialising in Greek or Mediterranean cuisine.
  • Strong technical knowledge of traditional cooking methods, including grilling, roasting, pastry, and mezze preparation.
  • Passion for authentic flavours, local ingredients, and simple, honest presentation.
  • Exceptional leadership that motivates and unites your team through respect and example.
  • Ability to balance creativity with cost control, operational performance, and staff development.
  • Qualifications in Culinary Arts or Certificate IV in Commercial Cookery are highly regarded.
  • Australian citizenship, permanent residency, or valid work visa.
