MAMAS Dining Group — the team behind Hochi Mama, Kiss & Tell, Straight Outta Saigon, Suzie Q, and Windsor Wine Room — is launching DISUKO, a high-energy Japanese rooftop restaurant and bar blending precision sushi, yakitori theatre and vinyl-fuelled nightlife. We're hiring Chefs de Partie, Commis Chefs, and Kitchen Hands to build a disciplined, creative BOH.

The Opportunities

Help drive excellence from pre-opening through launch and beyond — setting prep rhythms, hitting margin targets, and building a strong, clean kitchen culture.

With this being our first Japanese restaurant in the portfolio, we are super excited to build a cohesive team to bring our concept to life.

Responsibilities:

  • Prepare and cook dishes according to venue recipes and standards
  • Ensure the highest quality and presentation of food
  • Manage kitchen inventory and ensure freshness of ingredients
  • Maintain cleanliness and organisation in the kitchen
  • Adhere to food safety and sanitation regulations
  • Collaborate with the kitchen team to ensure timely and efficient service

Requirements:

  • Proven experience as a CDP or Commis Chef in a fast-paced environment
  • A strong passion for food and creativity in the culinary arts
  • Strong knowledge of various cuisines and cooking techniques
  • Ability to work efficiently under pressure
  • Excellent teamwork and communication skills
  • Flexibility to work evenings, weekends, and some lunches
