We are seeking an experienced and passionate culinary professional to assume the role of Head of Patisserie, this role will oversee and guide all pastry operations across a diverse portfolio of properties within our group, including The Hotel Windsor and associated restaurants, ensuring the highest quality and creativity within our offerings.

Our Afternoon Tea is one of the most popular in Australia and it's been served since the Hotel was founded in 1883. Held in our elegant One Eleven Restaurant, Afternoon Tea is served on three-tiered silver stands with ribbon sandwiches, savoury pastries, French patisserie, and freshly baked scones with house made Windsor jam and double cream.

Our group boasts a collection of world-class hospitality venues including hatted premium dining restaurant Aru, gluten-free bakery Kudo, and all-day dining brasserie Antara, and the modern Indian Saadi with each offering unique experiences for our valued guests. The Opportunity

Reporting to the Culinary Director, your key responsibilities include menu and product development, strategy and creating product identity for our venues, the training and development of pastry team members, quality control, and strategy and forward planning to position our offerings within the market.

This role requires strong leadership skills to mentor our pastry teams, an attention to detail, innovation and creativity, a well-rounded skill set in all aspects of patisserie, and a strong understanding of seasonal ingredients and trends.

Key Responsibilities:

  • Design and implement innovative pastry menus across all locations, focusing on seasonal ingredients and current trends.
  • Establish and maintain high standards for product quality, taste and presentation across all pastry offerings.
  • Streamline pastry production processes to enhance efficiency, reduce waste, and ensure consistency in output.
  • Oversee inventory levels, procurement and cost control for all pastry ingredients and supplies.
  • Ensure all pastry operations comply with health, safety and sanitation regulations.
  • Work closely with the Culinary Director and kitchen management teams to align pastry offerings with overall brand strategy and customer expectations.
  • Monitor industry trends and competitors to identify opportunities for innovation and improvement in pastry offerings.

What You'll Bring:

  • Extensive pastry experience, with at least two years in a senior role. Experience in large-scale restaurants or catering operations is also highly valued.
  • Proven leadership skills, with the ability to inspire, mentor, and guide a team to success.
  • A deep understanding of kitchen operations, including food safety, OH&S compliance, and best practices.
  • Exceptional communication skills, fostering collaboration across multiple departments while maintaining a positive and supportive work culture.
  • A high level of organization and attention to detail, ensuring consistency and excellence in a fast-paced environment.
  • Flexibility and adaptability, with availability to work weekends, public holidays, and a dynamic schedule as required.
