Matto Napoletano is a leading Neapolitan pizzeria located in Melbourne CBD, dedicated to producing traditional wood-fired pizza using imported Italian D.O.P. ingredients and authentic methods. Our reputation is built on quality, precision, and craftsmanship.
About the Role:
We are seeking an experienced Head Pizzaiolo to lead our pizza production. This hands-on role requires a deep understanding of Neapolitan dough fermentation, oven operation, toppings preparation, and consistent product quality. You will oversee kitchen workflow, train junior staff, and maintain high culinary standards.
Key Responsibilities:
- Preparing and managing traditional Neapolitan dough
- Operating and maintaining a wood-fired pizza oven
- Ensuring consistency in pizza quality and presentation
- Training and supervising kitchen staff
- Managing ingredient preparation and stock levels
- Maintaining cleanliness, safety, and food handling standards
Requirements:
- Minimum 3 years experience in authentic Neapolitan pizza-making
- Proven experience with traditional wood-fired ovens
- Strong leadership skills and ability to train staff
- High attention to detail and commitment to quality
- Ability to work in a fast-paced kitchen environment
Job Type: Full-time
Pay: $77,000.00 – $85,000.00 per year
