THE VENUE

Before Byron Bay became a dining destination, there was Light Years. Tucked in an intimate space in the centre of town, the modern Asian restaurant became a fast favourite for its playful approach to hospitality, a modern Asian dining experience that offers delicious share-style food, unique cocktails, and friendly wait staff.

Since it first opened back in 2017, the stalwart of the beach town's dining scene has become something of a phenomenon, spawning outposts in Noosa, Burleigh Heads and Newcastle. And in late 2022, Light Years Byron Bay packed up and opened its second iteration in a brand new, larger space – an evolved, grown-up version.

Fast forward to 2025, and it's time for Light Years to spread its flavour powered wings to Western Australia. A prime Perth CBD location, situated within a stylish iconic heritage building on William Street, Light Years Perth will be the biggest (boldest) venture yet. This two-hundred-seater venue will showcase laneway dining, private dining and a stunning centralised bar for a good dose of good-time vibes

POSITION SUMMARY

The Sous Chef at Light Years Asian Diner plays a key role in supporting the Head Chef in overseeing kitchen operations, ensuring the highest standards of food quality, and contributing to the overall success of the restaurant. The Sous Chef is expected to have a sound understanding of the menu and all kitchen processes.

ABOUT YOU
  • Sound communication skills.
  • 3+ years Experience in a fast paced, high volume venue (essential)
  • A positive approach to other team members and FOH staff
  • Experience with asian ingredients preferred but not essential
  • Be both punctual and reliable
  • Work well under pressure
  • Cook and prepare dishes as per company specifications
  • Maintain food and hygiene standards
  • Being able to follow recipes and specs to a company standard

KEY RESPONSIBILITIES
  • Adherence to Standards: Ensure the consistent maintenance of our company standards in terms of quality, service, presentation and cleanliness with the kitchen.
  • Staff Training and Development: Take charge of training junior staff chefs and maintaining a culture of continuous improvement and skill enhancement. Ensure your staff receive the required training in compliance with all company procedures.
  • Communication: Take an active role in the positive communication between the FOH and BOH when running the kitchen.
  • Food Safety: Ensure all kitchen staff are trained and working in accordance with the Light Years Standard and Food Safety program. Collaborating with the Head Chef in managing all WHS aspects of the BOH.
  • Auditing: working towards high scores in all inspections and audits held within Light Years.
  • Team Work: Working together with your fellow managers to maximise the restaurant's potential both as an individual business and as a business a part of the Arcade Agency Group.
  • Supplier Management: Work alongside the Head Chef in monitoring food COGS, communicating with suppliers in the event of price increases on products and adjusting GP as needed.
