We are seeking an experienced and highly skilled Head Chef to join Di Stasio Carlton, one of Melbourne's most respected Italian dining destinations. This role requires a leader who can uphold the restaurant's exceptional standards, bring creativity to menu development, and maintain strong operational control.

Key Responsibilities:

  • Oversee daily kitchen operations, ensuring consistency, quality, and presentation in every dish
  • Work closely with the Executive Chef to develop and execute seasonal specials, menu updates, and new dishes
  • Implement and monitor cost control measures, including food, labor, and waste management
  • Lead, train, and mentor the kitchen team to deliver peak performance and maintain a positive, professional environment
  • Ensure compliance with all food safety, hygiene, and OH&S requirements

Requirements:

  • Proven experience as a Head Chef or Senior Sous Chef in a high-volume, high-standard kitchen
  • Strong knowledge of Italian cuisine and premium produce
  • Excellent leadership, communication, and organisational skills
  • Ability to work collaboratively within a team and adapt to evolving service demands
