About the Role

We are looking for an experienced Baker to join our production team. This role focuses on morning bake, bread dough mixing, shaping, and preparing a range of products including breads, sweet loaves, scrolls, and buns.

No lamination experience is required — this is not a junior role. We are seeking someone who is confident, reliable, and consistent in high-volume, quality-focused bakery production.

Key Responsibilities

  • Begin shifts at 5:00 AM and manage the morning bake to ensure bread and baked goods are ready for store opening.
  • Mix, scale, shape, and bake sourdough, baguettes, focaccia, and other bread varieties.
  • Prepare and bake sweet breads and scrolls, following established recipes and methods.
  • Maintain dough quality through correct fermentation, shaping technique, and baking times.
  • Ensure product quality, consistency, and presentation standards are always met.
  • Maintain a clean and organised work environment, following food safety and WHS standards.
  • Work collaboratively with the production team to support daily output and efficiency.

  • Experience in a bakery environment working with bread dough (not entry-level).
  • Strong understanding of fermentation, shaping, and baking processes.
  • Ability to work efficiently during early mornings and in a fast-paced environment.
  • Reliable, self-motivated, and consistent with attention to detail.
  • Team player with a positive and professional attitude.
