Our first venture into the hospo world saw us turn a dilapidated heritage-listed Civic Video store in Katoomba into an award-winning brewpub serving Australia's #1 rated beer. Since then, we have opened two venues in Sydney, and now we are growing our venue footprint across Melbourne and Tasmania.
We are looking for a talented Head Chef to lead our kitchen operations at our Redfern venue.
This is an exciting opportunity for a culinary enthusiast with a passion for bold and contemporary flavours, ideally with smoker and smoked meat experience to manage a dynamic, fast-paced environment, and create menus that encapsulates Australian Pub food, with a sprinkling of American Smokehouse BBQ.
In this role, you'll be responsible for menu creation, meeting cost controls, food preparation, and team management. The ideal candidate will have a strong background in cuisine spanning European, modern Australian pub fare and American BBQ. The menu will capture a corporate lunch crowd, sharing options for groups at dinner and some fun food that suits our beers.
Key Responsibilities:
- Oversee daily kitchen operations, ensuring food quality and consistency.
- Develop and execute creative seasonal menus that delight our patrons.
- Lead and train kitchen staff, fostering a collaborative team environment.
- Manage inventory and maintain cost-effective operations.
- Ensure compliance with health and safety regulations.
Who You Are:
- A seasoned Head Chef with at least two years of experience who loves a casual but flavourful style of food, or an experienced Sous Chef ready for the next big challenge.
- Experienced in leading a small, but dynamic team in a busy kitchen environment.
- An effective communicator who fosters teamwork and supports staff development.
- Committed to maintaining high standards of food quality and safety.
- Creative and adaptable, with a knack for blending traditional flavours with modern twists.
