Experienced Cocktail Bartender – Aalia, Sydney

Aalia, part of the prestigious ESCA Group (home to Ito 1 Hat, Nour 1 Hat, Lilymu, Joji, and more), is a 2-Hatted fine dining Middle Eastern restaurant in Sydney. We are seeking an experienced cocktail bartender with a passion for craft cocktails, refined service, and delivering exceptional guest experiences.

About the Role

As a cocktail bartender at Aalia, you will:

  • Create and serve high-quality cocktails to match the fine dining experience.
  • Work under pressure during busy service while maintaining impeccable standards.
  • Guide guests through the cocktail menu, offering recommendations and creating memorable experiences.
  • Collaborate closely with the FOH and kitchen teams to ensure seamless service.
  • Maintain cleanliness, organisation, and stock control behind the bar.

What We're Looking For

  • Minimum 2 years of experience in refined restaurant cocktail bars.
  • Exceptional knowledge of classic and contemporary cocktails, spirits, and wine service.
  • Ability to perform consistently under pressure while delivering impeccable service.
  • Strong communication and teamwork skills in a high-paced, professional environment.
  • Passion for hospitality and creating memorable guest experiences.
