The Role

As Head Chef, you'll take full ownership of kitchen leadership—from developing and executing our menu vision, to building a high-performance team culture. You'll play a critical role in ensuring our food remains consistently excellent, innovative, and true to the spirit of The Apollo.

What You'll Do

  • Lead, mentor, and inspire the kitchen team in a positive, collaborative environment.
  • Drive creative menu development while maintaining brand consistency and profitability.
  • Maintain exceptional quality and service standards across all kitchen operations.
  • Oversee financial performance including food costs, rostering, and supplier management.
  • Ensure compliance with food safety and OH&S requirements.
  • Collaborate closely with FOH, marketing, and operations to deliver cohesive guest experiences.
  • Engage in ongoing team training, feedback, and development to build a thriving kitchen culture.

What You'll Bring

  • Proven experience as a Head Chef or Senior Sous in a fast-paced, premium restaurant.
  • A deep understanding of Mediterranean or modern Greek cuisine (a plus, not essential).
  • Strong leadership, communication and team development skills.
  • Exceptional standards in food quality, consistency and presentation.
  • Commercial acumen with an eye for cost control, efficiency and innovation.
  • A love of service, food, and the energy of a busy, buzzing kitchen.
