The National Zoo and Aquarium is one of Australia's most highly regarded zoological institutions and was recently recognised as one of the top two Major Tourist Attractions in Australia at the Australian Tourism Awards. It is also home to Jamala Wildlife Lodge, internationally acclaimed as one of the world's leading animal lodges.

We are seeking an energetic and professional individual to take on a two-part leadership role, managing both the day-to-day operations of the zoo's food and beverage outlets and the operational delivery of events and functions.

About the Role

This is a diverse leadership role with a balance between food and beverage outlet management and event operations. You'll work with a team of experienced supervisors to ensure the smooth running of the zoo's dining outlets and to deliver exceptional experiences for our event and function guests.

Food & Beverage Operations

You'll oversee the day-to-day performance of:

  • Rhino Bistro and kitchen
  • Jungle Vines Café
  • Meerkat Snack Shack (open on busy days)

Your focus will be on maintaining high standards, supporting staff, and ensuring guests enjoy quality service and presentation.

Events & Functions

Alongside your food and beverage duties, you'll also coordinate and manage the operational delivery of zoo events, conferences, and private functions. You'll be onsite to lead the team during key functions, ensuring everything runs seamlessly from start to finish.

This position offers a rewarding mix of hands-on leadership and operational oversight, with strong support from the Visitor Services Manager and outlet supervisors. You'll lead by example, working alongside your team to deliver exceptional service and smooth daily operations.

Key Responsibilities

Food & Beverage Operations

  • Recruit, train, roster, and supervise front-of-house and kitchen staff
  • Oversee all food preparation, presentation, and service standards
  • Ensure compliance with Food Safety and WHS regulations
  • Maintain cleanliness and hygiene across all dining and food preparation areas
  • Manage stock levels, ordering, and monthly stocktakes
  • Oversee cash handling, EFTPOS transactions, and reconciliation of takings

Events & Functions

  • Coordinate and manage the operational delivery of all functions, events, and conferences
  • Liaise with internal teams and external clients to ensure smooth execution
  • Be onsite during events to lead staff and uphold service quality
  • Support the setup, service, and pack-down of events as required

About You

The ideal candidate will demonstrate:

  • A professional and positive attitude
  • Strong leadership skills with the ability to motivate and manage a team
  • A background in both hospitality operations and event/function management
  • Commitment to maintaining excellent customer service and presentation standards
  • A thorough understanding of Food Safety and WHS requirements
  • Experience handling cash and EFTPOS transactions
  • The ability and desire to work in a hands-on capacity, including at the bistro servery
  • Excellent personal presentation
  • Willingness to work weekends, evenings and public holidays per business requirements
