About Molly

Hidden above the streets of Canberra City, Molly is one of the capital's most iconic whisky and cocktail bars — known for its world-class drinks, live jazz, and warm, speakeasy atmosphere. With an ever-evolving cocktail list and an extensive whisky collection, Molly delivers a unique hospitality experience that's both refined and relaxed.

Australian permanent residency is required for these positions.

We're now looking for passionate, people-driven professionals to join our leadership and front-of-house team as Bar Manager and Floor Host.


Bar Manager

As Bar Manager, you'll be the driving force behind Molly's operations, ensuring smooth service, maintaining high standards, and leading a talented bar team.

You'll have the freedom to shape cocktail menus, manage stock, and deliver exceptional guest experiences every night.

Responsibilities:

  • Oversee daily bar operations and ensure consistent, top-quality service
  • Manage and mentor bar staff, fostering a positive team culture
  • Develop and execute creative cocktail and whisky programs
  • Maintain stock control, ordering, and supplier relationships
  • Ensure compliance with RSA and licensing requirements
  • RSA certification must be obtained within 2 weeks of commencement
  • RSA certification must be held prior to application
  • Work closely with venue management to deliver exceptional guest experiences

You'll bring:

  • Proven experience in bar or venue management
  • A minimum of 1-2 years of bar or venue management experience
  • Strong cocktail and whisky knowledge
  • Leadership skills with a hands-on, team-first attitude
  • Exceptional customer service and communication skills
  • A passion for creating memorable hospitality moments

Floor Host

As Floor Host, you'll be the face of Molly – greeting guests, managing bookings, and ensuring the bar's signature warmth and hospitality are felt from the moment guests walk in.

Responsibilities:

  • Welcome and seat guests with professionalism and warmth
  • Manage bookings and guest flow on busy nights
  • Support floor service and liaise with the bar team
  • Anticipate guest needs and ensure every experience is seamless

You'll bring:

  • Previous experience in high-end bar or restaurant service
  • A minimum of 6 months' experience in high-end hospitality service
  • Excellent communication and people skills
  • Impeccable presentation and attention to detail
  • Calm, confident presence in a fast-paced environment
