We are currently seeking a skilled Cook specialising in hot Japanese cuisine to join our busy kitchen team. The role focuses on preparing high-quality hot dishes such as donburi, deep-fried items, and other traditional Japanese comfort foods.

Main Tasks

  1. Preparation and Cooking of Hot Food

  2. Prepare high-quality hot Japanese dishes (e.g. donburi, tempura, katsu, deep-fried dishes, udon/soup bases).

  3. Follow recipes and presentation standards to ensure consistency.
  4. Ensure meals are produced on time and in sufficient quantities for service.
  5. Monitor food quality, taste, and presentation.

  6. Assist in menu input by suggesting improvements for hot food items.

  7. Team Support

  8. Work effectively with chefs and other kitchen staff.

  9. Assist in training new staff members in hot food preparation.
  10. Coordinate with sushi chefs to ensure smooth kitchen operations.

  11. Follow instructions from the Head Chef and contribute to a positive team culture.

  12. Stock and Kitchen Management

  13. Ensure correct portioning to minimise wastage.

  14. Maintain stock rotation and proper storage of fresh and dry goods.
  15. Report shortages of hot food ingredients in a timely manner.

  16. Keep equipment clean and report any maintenance issues.

  17. Food Safety & Hygiene

  18. Follow all food safety, sanitation, and hygiene standards.

  19. Keep the hot food preparation area clean and safe at all times.
  20. Assist in kitchen cleaning at the end of shifts.
  21. Follow safe work practices at all times.

Skills and Abilities Required

  • Proven experience as a Cook, preferably in Japanese cuisine.
  • Knowledge of Japanese hot food (deep frying, donburi, tempura, katsu, soups).
  • Punctual, organised, and trustworthy.
  • Ability to work under pressure in a fast-paced environment.
  • Team player with good communication skills.
  • Attention to detail in food quality and presentation.
  • Understanding of food safety and hygiene regulations.

Qualification & Experience

  • Relevant work experience in a commercial kitchen (Japanese cuisine preferred)
