Who we are

Saint Hotel, based in St Kilda has been a landmark of Fitzroy Street since its establishment in 1915. The iconic building has recently undergone a complete restoration and refurbishment and is elated to be open to the public once again in the new year. With a heritage facade, and multiple offerings - Saint Hotel will reinvigorate the Fitzroy Street strip. The venue is split across two levels, with three bars, including a modern public bar, a semi al fresco bar and an elegant cocktail lounge. Showcasing modern Australian food with a strong focus on charcoal grill and seasonal Victorian produce, Saint Hotel will provide elevated and varying food and beverage offerings in a luxe environment. Finally, Saint Hotel extends its offer with a retail wine store where guests can also consume purchased wine on site and have access to a food menu.

Experience and personal attributes
- True passion for everything beverage and hospitality
- Experience in managing different styles of bars including high volume and fast paced
- Strong knowledge in spirits, beers and wine
- Ability to develop a unique, modern and forward-thinking beverage program
- Solid understanding and experience in ordering and stock control
- Strong leadership skills and capable of developing, nurturing and managing a team
- Ability to manage tap beer program
- Efficiency in managing beverage cogs
- Exceptional communication and presentation

Key Responsibilities
- Developing cocktail / non alc program for 3 bars
- Managing tap beer program
- Recruiting, training, managing bar team
- Work closely with beverage director to keep offer up to date and manage financial goals
- Manage time efficiently using team to delegate
- Rostering / staffing / efficiently managing wage cost
