Liquid & Larder is seeking a passionate Group sommelier to head up the teams across the company with venues including Bistecca, The Gidley and a revamped Wild Rover, located in Surry Hills.

Awarded Australia’s Best New Wine List at the 2019 Wine Awards, Bistecca boasts over three-hundred lines featuring Italian grape varietals from Italy and Australia. It’s one of Sydney’s most hyped venues, known for serving only one main dish (bistecca alla Fiorentina), an abundance of delicious wine and a no-phone policy in the dining room.

The Gidley, found in Sydney’s CBD on the corner of King and Elizabeth, is an opulent steak house, where fine dining meets semi-respectable displays of gluttony and where indulgent fare with generous serves of cheeky bravado. The restaurant offers a worldwide wine list, following the ‘Langtons classification’ to add structure and purpose. Featuring classic grapes from classic regions including elegant and well-made wine.

Toasting to wilder days of a swashbuckling, foot-stomping whiskey bar, Wild Rover re-emerges as ‘The Rover’ with the bustling charm of old and the sophistication of a dapper New York cocktail & wine bar. Boasting a New England-inspired menu, the Group Sommelier would be responsible for constructing an award-worthy list of fifty wines to complement the food offering before training the team to deliver the jovial service style reflective of the venue.

Working closely with each venues Sommeliers and the Group Restaurant Manager, the role is primarily focused on overseeing the company wine program. This includes managing the wine teams, organising & delivering training sessions with enough time on service to ensure service standards are being met and exceeded.
