Job Description

As a skilled chef, you will take the lead in your section of the kitchen, ensuring every dish is prepared to the highest standard. You will support a culture of creativity, consistency, and quality, working closely with the Executive Chef and wider culinary team.

The role involves managing daily operations, training and mentoring junior chefs, and upholding strict HACCP and safety standards. You will be responsible for preparing work schedules and annual leave schedules within budget and business expectations.

You will also manage suppliers to obtain quality products at the best possible price, working with the Executive Chef to manage the department's expenses.

  • Assist the Executive Chef to manage all functions of the Food Production and Stewarding operations to achieve optimum departmental profit
  • Assist the Executive Chef with minimum and maximum stocks of all food, material, and equipment
  • Set standards of all food and equipment purchases in accordance with guidelines
  • Monitor local competitors and compare their operation with the hotel's Food and Beverage operation
  • Support the Executive Chef in preparing the hotel's revenue plan and marketing programs
  • Ensure sufficient quantity and quality of food stock levels within food preparation areas
Required Skills and Qualifications
  • Full working rights in Australia without restrictions
  • At least two years' experience in a similar role
  • Mandatory certifications include Certificate III in Commercial Cookery, desirably Certificate IV
  • Passion for providing luxury experiences and personalising guest stays
  • Ongoing availability to work flexibly as rostered, including nights, weekends, and public holidays
  • Impeccable grooming standards and good personal hygiene
  • An organised approach to handle large amounts of information
  • Good communication and writing skills
  • Physical fitness to lift, push, and pull objects up to 23 kg
