We are currently seeking an experienced Executive Chef to join our team at our Macquarie restaurant. This role offers an exciting opportunity to be part of a dynamic and fast-paced environment, where you will be responsible for producing high-quality American cuisine in a timely manner while maintaining strict food safety standards.

As an Executive Chef, you will report directly to the Head Chef or Sous Chef during their shift hours; otherwise, the Venue Manager will oversee all kitchen-related matters. You will also be responsible for supervising apprentices and kitchen hands, ensuring they adhere to the highest standards of cooking and presentation.

Key Responsibilities:
  • To ensure that all meals are prepared according to the restaurant's recipe and plating guides, adhering to the highest quality standards.
  • To manage kitchen staff allocation and secondary duties throughout shifts, as well as overseeing general kitchen operations in conjunction with the head chef.
  • Maintain a safe and hygienic kitchen environment, adhering to all food preparation and cleanliness guidelines.
  • Possess experience and demonstrate competence in technical cooking aspects, including grilling, deep frying, shallow frying, sautéing, blanching of vegetables, meat, seafood, and poultry.
  • Contribute to menu item development, improvement, and presentation, working across all kitchen stations, including prep, fry, grill, sandwich, pasta, and salad areas.
  • Cleanliness and organization of the kitchen and stock holding areas.
  • Occupational Health and Safety and Food Hygiene.
Requirements:
  • Fully Trade Qualified
  • Cert 3 in Commercial Cookery preferred
