
Culinary Leader for Premium Seafood Dining Destination

Embark on a culinary leadership journey as we seek an accomplished Sous Chef to spearhead the kitchen at our premium seafood dining destination. You'll be part of a dynamic team, working closely with renowned chefs to bring their innovative philosophy to life.
About the Role- As a key member of the culinary brigade, you will oversee day-to-day operations and lead by example in upholding quality, sustainability, and consistency standards.
You will contribute to menu development, execute seamless service, and maintain high standards of food safety and hygiene.
Your Responsibilities- Assist the Head Chef in leading the kitchen, managing daily operations, and ensuring exceptional service delivery.
- Mentor junior staff, provide guidance, and support in training and development.
- Evaluate and implement processes to improve efficiency and productivity in the kitchen.
- Sustain a positive and inclusive kitchen culture, fostering open communication and teamwork.
- Certificate III in Commercial Cookery (Essential)
- Minimum 3–5 years' experience in a premium dining kitchen, with at least 1–2 years in a leadership role (CDP or Sous)
- Proven expertise in seafood preparation, including whole-fish techniques
- Strong leadership, mentoring, and time-management skills
- Working knowledge of kitchen operations, ordering, stock control, and rostering
- Food Safety Supervisor Certificate (or willingness to obtain)
- Valid Australian working rights
- Manual open driver's licence (preferred)
