Leadership Opportunity in Premium Dining Kitchen

  • We are seeking an experienced and motivated Sous Chef to lead our premium dining kitchen team.
  • This is a fantastic opportunity for someone who thrives in fast-paced environments and has a passion for responsible seafood cookery, creativity, and consistency.

About the Role:

As Sous Chef, you will be responsible for overseeing day-to-day kitchen operations and team performance. This includes leading and training the brigade, ensuring the smooth running of service, and upholding standards of quality, sustainability, and consistency.

Your Key Responsibilities:

  1. Assist the Head Chef in leading the kitchen and supporting the team across all aspects of service.
  2. Oversee daily operations including mise en place, section management, and plating.
  3. Support and guide junior chefs and kitchen staff through mentoring and training.
  4. Ensure seafood preparation meets whole-fish, dry-ageing, and sustainability standards.
  5. Maintain kitchen compliance, food safety, hygiene, and allergen protocols.
  6. Collaborate on cost control, rostering, and ordering as part of leadership responsibilities.
  7. Contribute to a positive, professional, and inclusive kitchen culture.

What We're Looking For:

  • A confident and organised kitchen leader with a strong background in premium dining kitchens.
  • Minimum 3–5 years' experience in a senior culinary role, preferably in a leadership position.
  • Proven track record of delivering high-quality results while maintaining a safe and healthy work environment.
  • Strong leadership, mentoring, and time-management skills.
  • Working knowledge of kitchen operations, ordering, stock control, and rostering.
  • Food Safety Supervisor Certificate or willingness to obtain.
  • Valid Australian working rights.
  • Manual open driver's licence (preferred).
