Job Summary

We are seeking a highly skilled and experienced Junior Sous Chef to join our culinary team at Sofitel Sydney Darling Harbour. As a key member of our kitchen brigade, you will be responsible for the day-to-day management of food service operations across all kitchen outlets.

Key Responsibilities

  • Manage food service operations on a day-to-day basis, ensuring consistency and quality in all aspects of food preparation and presentation.
  • Meet and exceed customer and guest expectations, maintaining a high level of service quality and ensuring a positive dining experience.
  • Ensure food standards, preparation, presentation, and cooking techniques meet Brand Standard guidelines and are maintained at that level.
  • Work with the kitchen brigade to maintain high standards of hygiene and food safety, adhering to Health & Safety regulations and HACCP food preparation guidelines.
  • Assist the Executive Chef and Executive Sous Chef in updating Recipe Standards and developing new menus and concepts.
  • Develop and maintain operating procedures and systems, ensuring efficiency and effectiveness in kitchen operations.
  • Cultivate a positive work environment, promoting learning and personal development, and driving quality improvement.
  • Coordinate the stewarding team to meet kitchen requirements, ensuring seamless service delivery.
  • Adhere to Emergency Communication procedures, responding to media enquiries as required.
  • Implement Accor Vision and demonstrate active use of Accor Values.
  • Ensure full knowledge and understanding of expectations expected of you by Kitchen management, Food and Beverage management, Hotel Management, and the Business.
  • Promote a positive can-do attitude within the team, being adaptable to changing demands and expectations.

Requirements

  • Qualification in Commercial Cookery.
  • 1-2 Years' experience in a similar role.
  • Strong communication skills and attention to detail.
  • Professional appearance, representing the Sofitel brand.
  • Ability to work a rotating roster, including weekends, nights, and public holidays.
  • Genuine passion for gastronomy and the art of creating unique and memorable dining experiences.
  • Working understanding of food safety standards and HACCP.
  • Previous experience in high-volume kitchens.
  • Ability to work under pressure and meet tight deadlines.
