Distiller Role Summary

We are seeking a skilled and experienced distiller to join our team in the Adelaide Hills.

The successful candidate will be responsible for producing high-quality Australian craft spirits, including whisky, gin, vodka, and more.

Main Responsibilities:

  • Prepare raw materials and handle dry goods
  • Mashing process: conversion of malt/barley starch to fermentable sugars
  • Fermentation process: conversion of fermentable sugars to alcohol
  • Whisky distillation process: extraction of alcohol and flavour from beer/wash
  • Gin distillation process: extraction of botanical flavours to distillate
  • Cask handling/spirit pumping
  • Whisky, rum & white spirits blending/bottling
  • Audit records for quality control

Key Requirements:

  • Minimum 2 years experience in a production environment, preferably in distilling or brewing
  • Distilling qualifications from the Institute of Brewing & Distilling preferred but not essential
  • Pro-active and preventative attitude to occupational health & safety
  • Resilient, flexible, hardworking team player with a proactive attitude
  • Organised, reliable, and excellent communication skills
  • Keen interest in spirits and own professional development
