Job Overview

The ideal candidate will oversee the day-to-day operations of the culinary department and the Food & Beverage division, ensuring that both meet high standards and exceed guest expectations through unique and local experiences.

This role involves managing the team to achieve personal and professional goals, as well as performing administrative duties such as ordering and rostering. The successful candidate will also be responsible for preparing and presenting all dishes for client events, assigning tasks to subordinates, and training and guiding culinary employees.

Maintaining a high level of kitchen hygiene and occupational health and safety is crucial in this role. Additionally, the candidate should have strong leadership skills, foster a positive work culture, and stay up-to-date with new developments in food and beverage.

Main Responsibilities:
  • Manage day-to-day operations of the Kitchen Division
  • Exceed guest expectations by providing unique and local experiences
  • Motivate and engage the team to achieve personal and professional goals
  • Perform administrative tasks such as ordering and rostering
  • Prepare and present dishes for client events
  • Assign tasks and check performance of subordinates
  • Train and guide culinary employees
  • Maintain high standards of kitchen hygiene and occupational health and safety
  • Develop and implement new cooking methods and keep up-to-date with industry developments
Requirements:
  • Previous experience as a Chef de Partie in a large hotel or restaurant
  • Certificate III in Commercial Cookery (or equivalent)
  • Strong leadership and interpersonal skills
  • Ability to manage labour costs and maintain high standards of food safety
  • Knowledge of operational and functional aspects of kitchen administration
