Job Description

We are seeking a highly skilled and experienced Executive Pastry Chef to join our culinary team at Sofitel Brisbane Central.

About the Role

  • As a key member of our kitchen team, you will be responsible for the production of high-quality pastries and gateaux for our French boulangerie, Chou Chou.
  • You will work closely with our sous chefs to ensure the smooth operation of the pastry kitchen and maintain the highest standards of food hygiene and safety.
  • Responsibilities will include:
    • Supervising the pastry kitchen in the absence of the sous chefs
    • Producing pastries and gateaux for Chou Chou and other hotel areas
    • Ensuring employees are following procedures according to department and hotel policies
    • Following stock rotation and minimum wastage by control procedures and ensuring adequate supplies are available for service
    • Maintaining strict food hygiene and safety procedures
    • Preparing and producing menu items to established recipes and methods ensuring the production of high-quality food
    • Assisting with the maintenance of programs to ensure high standards of cleanliness and organisation within the kitchen and related outlets.

Requirements

  • Trade qualified in Commercial Cookery and patisseries (essential)
  • Experience in a similar role in a large hotel (preferred)
  • Creativity and passion for food and customer service
  • A true desire to work, grow and develop within a luxury, five-star environment
  • Passionate about providing an exceptional product

  • Excellent communication skills and the ability to work closely with all hotel departments
