Job Overview

We are seeking a seasoned Sommelier Leader to spearhead our wine and beverage service. This key role is responsible for delivering exceptional wine experiences, driving the development of our wine list, and implementing innovative beverage programs.

About the Role

  1. Promote and execute expert wine service, encompassing food pairings, decanting, and tableside presentation to ensure an unparalleled dining experience for our guests.
  2. Curate and maintain the wine list across multiple venues, including La Boca Bar and Grill, Pavilion Bar, and In-Room Dining, ensuring a cohesive and engaging beverage experience.
  3. Collaborate with the bar and culinary teams to design and implement signature cocktails and premium mocktails that align with our brand's vision.
  4. Manage the entire beverage program, including inventory management, supplier relations, and cost optimisation to drive business growth.
  5. Leverage leadership, training, and mentoring skills to enhance the knowledge and service skills of bar and service staff, fostering a culture of excellence in guest interaction.
  6. Oversight of bar operations ensures seamless delivery of high-quality services in fast-paced environments.
  7. Contribute to departmental planning, provide valuable insights through inventory reports, and develop strategies to improve profitability.
  8. Maintain adherence to relevant legislation, such as RSA and WHS, to guarantee a safe working environment.
  9. Engage proactively with guests to deliver bespoke beverage recommendations, enhancing overall satisfaction and loyalty.

Requirements

  • Minimum 2 years' experience in a senior sommelier or head bartender position within a premium or fine dining establishment.
  • Certificate in Responsible Service of Alcohol (RSA) to ensure compliance with regulations.
  • Demonstrated expertise in wines, cocktails, and food pairing principles to elevate the guest experience.
  • Familiarity with Opera, Micros, and beverage ordering systems to streamline operational efficiency.
  • Proven ability to lead service teams and orchestrate high-end guest experiences.
  • Experience managing inventory, beverage costing, and supplier engagement to drive revenue growth.
  • Superior communication, training, and interpersonal skills to foster collaboration and success.
  • Previous experience within a five-star hotel or internationally recognised dining venue can be advantageous.
  • Awards or formal recognition in wine or cocktail service can add significant value to your application.
