**Job Summary**

We are looking for a highly skilled and motivated Executive Japanese Culinary Specialist to oversee the preparation and presentation of our Japanese dishes, including maki and nigiri sushi, sashimi, grilled skewers, and donburi. The successful candidate will be responsible for maintaining high standards of food presentation and consistency, overseeing stock management, and collaborating with the kitchen team to ensure smooth service during peak hours.

**Key Responsibilities**

  • Prepare and cook a variety of Japanese dishes, adhering to our high-quality standards.
  • Maintain impeccable food presentation, ensuring consistency and attention to detail.
  • Oversee stock management, ensuring timely ordering of fresh ingredients and minimizing waste.
  • Collaborate with the kitchen team to ensure seamless service during peak hours.
  • Ensure compliance with food safety regulations and maintain a clean and hygienic kitchen environment.
  • Train and supervise junior staff, providing guidance and support to ensure their success.
  • Assist in developing new menu items and seasonal specials, contributing to the growth and success of our restaurant.
  • Manage food preparation to accommodate dietary requirements, ensuring that all guests have a memorable dining experience.
  • Optimize kitchen operations to minimize waste and control costs, driving efficiency and profitability.

**Essential Requirements**

To be successful in this role, you will need:

  • At least Certificate IV in Commercial Cookery or higher, or equivalent trade qualifications.
  • At least 2 years of relevant work experience in Japanese cuisine, preferably in a high-pressure environment.
  • Excellent communication and leadership skills, with the ability to thrive in a fast-paced kitchen.

**Benefits**

We offer a competitive salary ranging from $70,000 to $75,000 per annum, based on experience and qualifications, as well as:
