Our culinary team collaborates closely with local NSW farmers and artisans, with Executive Chef Noel Jelfs ensuring that only the finest ingredients are utilized in our dishes. The seasonal menu is influenced by traditional Italian methods, prominently featuring a grand wood-fired oven at the center of our kitchen.
Position Overview
This opportunity has arisen following an internal advancement, and we are in search of a skilled Assistant Kitchen Manager to become part of the esteemed team at Uccello. A genuine enthusiasm for Italian gastronomy is essential, along with a solid understanding of Italian culinary techniques.
Key Qualifications:
- A minimum of 3 years in a comparable role, preferably within high-end dining establishments.
- Exceptional execution skills and meticulous attention to detail.
- Ability to lead and mentor a team of over 15 chefs in collaboration with the Executive Chef.
- Familiarity with workplace health and safety regulations, allergen management, and kitchen compliance.
- A passion for Italian cuisine, complemented by a thorough knowledge of traditional cooking methods.
- Experience in various kitchen roles, including proficiency with wood-fired cooking.
- Previous involvement in management teams and familiarity with kitchen financial operations.
