Job Overview

We are seeking a seasoned Manufacturing Director to lead our hard cheese operations. This role requires a strong technical background in dairy, with expertise in driving quality, efficiency, and safety in the production of cheddar, parmesan, and other hard cheeses.

Key Responsibilities:
  • Oversee the entire manufacturing process for hard cheeses from raw milk to maturation.
  • Supervise daily production activities including curd cutting, whey separation, moulding, pressing, brining, and aging.
  • Lead and develop production coordinators, team leaders, and line operators.
  • Ensure product quality meets food safety standards (HACCP, BRC, DAFF compliance).
  • Drive continuous improvement in yields, throughput, and line efficiency.
  • Manage maintenance schedules, cleaning-in-place (CIP) programs, and ensure sanitation protocols are followed.
  • Contribute to capital projects and layout optimisation to scale up production.
Requirements:
  • 3–5+ years in cheese manufacturing, preferably in hard cheese like cheddar or parmesan.
  • Experience managing production teams in a food-grade environment.
  • Knowledge of continental cheese processes is an advantage.
Technical Skills:
  • Strong understanding of dairy science, milk standardisation, fat-to-casein ratios, and whey management.
  • Familiarity with rennet use, salting (dry / brining), and cheese maturation.
  • Proficiency in production systems, Excel, and basic SCADA or PLC understanding.
