Career Opportunity: Butcher - Meat Cutter

We are seeking an experienced and skilled butcher to join our team at Costco Wholesale. This role involves working in a fast-paced environment, cutting and trimming raw meat for sale using various equipment such as saws, knives, grinders, and tenderizers.

Daily Tasks and Responsibilities:

  • Inspect and reassemble equipment sanitized the previous night and rework display cases to assess daily production needs and rotate product.
  • Bring cases of meat, up to 40kgs, from the cooler and empty contents onto the meat cutting or other preparation area.
  • Cut and trim meat to Costco specifications using band saws and knives, operate tenderizing machines, and follow safety and security procedures.
  • Operate meat grinders, dump meat into the top of the machine, and check fat content of each batch from the grinder. Follow proper department production procedures and standards for quality and consistency of finished products.
  • Transfer cut and ground meat to styrofoam trays, load styrofoam trays onto large plastic trays, and transfer to large wheeled racks for wrappers. Assist with wrapping and stocking meat cases according to the Meat Manager's plan for product presentation and merchandising.
  • Clean and sanitize areas throughout the day, perform duties to comply with health codes, such as sanitation standards and maintaining proper temperatures.
  • Perform routine maintenance for machinery, equipment, and implements.
  • Provide and ensure prompt and courteous member service.

Estimated Salary: $45,000-$60,000 per year, depending on experience and qualifications.

About the Role:

This is a full-time position requiring a rotating roster which may include weekend work and starts from 5am or finishing as late as 11pm. The ideal candidate will have a background in butchery, excellent communication skills, and the ability to work well under pressure.
