About the Role

We are seeking a highly skilled and experienced Executive Chef to lead our culinary team at Mindil Beach Casino Resort. As a key member of our management team, you will be responsible for overseeing all aspects of culinary operations, including high-volume production, high-end à la carte dining, restaurants, meetings, and events.

Key Responsibilities
  • Oversee multiple busy outlets, including a significant banquet operation, to ensure seamless execution and exceptional customer experiences.
  • Recruit, train, and develop team members to ensure culinary team success and foster a culture of excellence.
  • Lead annual menu planning initiatives from conception, including banquet kits, seasonal à la carte, and VIP dining.
  • Coordinate teams across multiple departments to deliver on large-scale events and exceed customer expectations.
  • Manage operational activities related to kitchen operations to achieve financial plans, profit margins, and business growth.
  • Oversee the Food Safety Management System, ensuring all HACCP standards are adhered to.
Requirements
  • A minimum of 5 years of experience working in a similar role with a successful track record managing large-scale and high-end kitchen operations.
  • Competence in using business technology and computer programs, such as stock control systems, spreadsheets, accounting systems, procurement, costings, scheduling, and Microsoft platforms.
  • Extensive knowledge of cooking techniques across a range of international culinary styles.
  • Appropriate culinary qualifications and a passion for food, with demonstrated creative flair.
  • Experience with menu setting and stock control.
