We are seeking an experienced Executive Sous Chef to join our distinguished culinary team at Mindil Beach Casino Resort, the Northern Territory's premier hospitality destination.

As a leading provider of food and beverage services in the region, we offer a blend of luxury accommodation and world-class dining experiences nestled in a vibrant tropical paradise on Darwin's beachfront.

The successful candidate will oversee multiple dining outlets, driving business growth, leading a high-performing team, and designing modern menus that respect traditional cuisine.

Key Responsibilities:

  • Oversight of seamless operations across multiple outlets, ensuring exceptional guest experiences.
  • Maintenance of business acumen, managing costs, driving improvement, and handling budget planning.
  • Leadership of staff management, focusing on training and development in modern culinary trends.
  • Design of modern menus while respecting traditional cuisine.
  • Maintenance of food safety standards, ensuring compliance across all culinary operations.

Requirements:

  • Minimum 5 years' experience in a similar role within a comparable operation.
  • Possession of a deep passion for modern menu design and a respect for traditional cuisine.
  • Previous experience operating within a HACCP-accredited environment.
  • Familiarity with a wide range of cooking styles and ethnic cuisines.
  • Strong computer skills, experience with procurement, costings, and proficiency in Microsoft platforms.

Compensation:

The estimated annual salary for this position is $120,000-$150,000 AUD, depending on experience. This figure is based on industry standards for senior culinary positions in the Northern Territory.
