Job Summary

We are seeking a highly skilled and experienced Executive Chef to lead our culinary team at 1 Hotels & Homes Melbourne. As a key member of our management team, you will be responsible for driving our culinary vision and ensuring exceptional quality and sustainability in all aspects of our food operations.

Key Responsibilities
  1. Culinary Strategy and Operations
  • Develop and execute a comprehensive culinary strategy that aligns with our brand values and sustainability goals.
  • Oversee day-to-day kitchen operations, ensuring seamless execution of menus, purchasing, staffing, and food preparation.
Team Leadership and Development
  • Lead and mentor a diverse team of culinary professionals, fostering a culture of excellence, innovation, and continuous improvement.
  • Recruit, select, and develop top talent to drive business growth and success.
Culinary Excellence and Quality
  • Design and coordinate menus that showcase local, fresh, and progressive food, while maintaining exceptional quality and presentation.
  • Ensure top-notch sanitation and food standards, adhering to industry best practices and regulatory requirements.
Sustainability and Innovation
  • Drive sustainability initiatives in food sourcing, waste reduction, and energy efficiency, aligning with our brand's commitment to environmental stewardship.
  • Stay ahead of industry trends, incorporating innovative ideas and techniques to enhance our culinary offerings and guest experience.
Financial Management and Planning
  • Develop and manage the culinary budget, ensuring financial goals are met while maintaining a positive cost management index.
  • Monitor and analyze financial performance, making data-driven decisions to optimize profitability and efficiency.
Requirements
  1. Culinary Expertise
  • Proven track record of success as an Executive Chef or equivalent role in a luxury or lifestyle hotel.
  • Extensive knowledge of local, fresh, and progressive food, with a passion for sustainability and innovation.
Leadership and Management
  • Strong leadership and team management skills, with experience in mentoring and developing culinary professionals.
  • Ability to lead by example, fostering a culture of excellence, innovation, and continuous improvement.
Business Acumen and Financial Management
  • Proven ability to manage budgets, monitor financial performance, and make data-driven decisions to optimize profitability and efficiency.
  • Strong understanding of financial management principles, with experience in developing and managing culinary budgets.
Communication and Interpersonal Skills
