About the Role

We are seeking an exceptional Executive Chef to lead our culinary team at JRM Hospitality's premium winery in the Hunter Valley. As a visionary culinary leader, you will be responsible for creating unforgettable dining experiences that harmoniously blend food and wine.

Key Responsibilities
  • Menu Development: Develop and execute a creative, seasonal menu that showcases the finest in Spanish/Mediterranean cuisine and perfectly complements our wine offerings.
  • Team Leadership: Lead, train, and inspire a team of culinary professionals, fostering a collaborative and high-performance kitchen culture.
  • Kitchen Operations: Oversee all aspects of kitchen operations, including menu planning, food preparation, and presentation for the restaurant and cellar door offerings.
  • Quality and Cost Control: Maintain the highest standards of food quality, consistency, and presentation, while managing food and labor costs to meet budgetary goals.
  • Marketing Collaboration: Collaborate with the marketing team to create unique food and wine pairing experiences and special events.
  • Supply Chain Management: Source and maintain relationships with local suppliers and artisans, while also incorporating imported Spanish ingredients to ensure the use of fresh, high-quality products.
  • Compliance: Uphold strict compliance with health, safety, and sanitation standards in the kitchen.
About You
  • Culinary Expertise: Proven experience as an Executive Chef or in a similar leadership role, preferably within a fine dining or upscale restaurant environment.
  • Leadership Skills: Exceptional leadership, communication, and organisational skills.
  • Creativity and Attention to Detail: Creativity and a keen eye for detail in food presentation.
  • Business Acumen: Experience in developing and implementing strategies to achieve sales and labor cost budgets.
  • Management Skills: Solid management and financial skills.
