About the Role

Spirou Seafood and Salad is seeking a highly skilled and experienced Executive Chef to lead our culinary team. As a key member of our management team, you will be responsible for developing and implementing menus, managing kitchen operations, and ensuring exceptional food quality and presentation.

Key Responsibilities
  • Menu Development: Create and implement new menu items and recipes that showcase our seafood and salad offerings, while ensuring menu balance and dietary requirements are met.
  • Kitchen Operations: Oversee the preparation and presentation of dishes, ensuring consistency and high standards of quality.
  • Team Management: Manage and mentor kitchen staff, providing guidance and support to ensure efficient kitchen operations and high levels of customer satisfaction.
  • Inventory and Ordering: Monitor inventory levels, manage food storage, and ensure proper stock rotation to minimize waste and optimize food costs.
  • Quality Control: Conduct regular taste tests and quality checks to ensure all dishes meet our high standards.
  • Customer Service: Interact with guests to gather feedback and adjust recipes accordingly, while maintaining a positive and professional demeanor.
  • Compliance and Safety: Ensure adherence to health and safety regulations, proper use and maintenance of kitchen equipment, and high standards of cleanliness and sanitation.
  • Training and Development: Train and mentor junior kitchen staff, stay updated with industry trends and cooking techniques, and encourage professional development within the kitchen team.
Requirements
  • Education and Experience: Certificate III in Commercial Cookery or equivalent qualification, with 2-5 years of experience in a similar role, preferably in a high-volume kitchen or specific cuisine.
  • Skills: Strong culinary skills, excellent organizational and time management abilities, and ability to work under pressure.
  • Personal Attributes: Creative and passionate about food and cooking, strong leadership and communication skills, attention to detail, and a commitment to quality.
  • Certifications: Food handling and safety certification, and any relevant industry certifications or memberships.
  • Physical Requirements: Ability to stand for long periods, lift heavy items, and work in a fast-paced and sometimes stressful environment.
