About the Role:



Job Summary

This senior culinary operations manager position plays a pivotal role in ensuring the quality, consistency, and production of kitchen areas. Reporting directly to the sous chef, you will be responsible for leading the staff and managing food functions while personally performing tasks.



Main Responsibilities

  • Ensuring Culinary Standards and Responsibilities are Met:

    • Supervise food preparation and production to ensure compliance with recipes and specifications.
    • Maintain food preparation, handling, and storage standards.
    • Recognize superior quality products, presentations, and flavor.
    • Plan and manage food quantities and plating requirements.
    • Assist in developing daily and seasonal menu items.
    • Ensure compliance with all applicable laws and regulations.
    • Prepare and cook foods of all types.
    • Check the quality of raw and cooked food products.
    • Determine how food should be presented.

  • Leading Kitchen Team:

    • Supervise and coordinate activities of cooks and workers.
    • Utilize interpersonal and communication skills to lead the team.
    • Lead shift teams while personally preparing food items.
    • Supervise and manage restaurant kitchen employees.
    • Encourage and build mutual trust, respect, and cooperation among team members.
    • Evaluate employee performance and provide constructive feedback.
    • Develop specific guidance and plans to prioritize, organize, and accomplish daily kitchen operations work.

  • Establishing and Maintaining Kitchen Goals:

    • Sets and supports achievement of kitchen goals.
    • Understand the impact of kitchen operation on the overall property financial goals and objectives.
    • Effectively investigate, report, and follow-up on employee accidents.
    • Know and implement company safety standards.

  • Ensuring Exceptional Customer Service:

    • Provide services that are above and beyond for customer satisfaction and retention.
    • Manage day-to-day operations to meet customer expectations.
    • Improve service by communicating and assisting individuals to understand guest needs.
    • Set a positive example for guest relations.
    • Empower employees to provide excellent customer service.
    • Handle guest problems and complaints.
    • Interact with guests to obtain feedback on product quality and service levels.



Requirements

  • Education: High school diploma or GED; 4 years experience in culinary, food, and beverage, or related area. OR 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years experience in culinary, food, and beverage, or related area.
