We are seeking a skilled and motivated Sous Chef to join our dynamic team at Yamagen.
Job Description:
Yamagen is part of EVT, a leader in creating memorable experiences across entertainment, hospitality, and travel. We offer a modern Japanese izakaya experience with a chic Tokyo-inspired ambiance.
The menu features fresh sashimi, intricate sushi, robata grilled dishes, and an Omakase experience curated by Executive Chef Adam Lane. The Whisky and sake collections are curated to complement the sophisticated yet casual vibe.
Responsibilities:
- Ensure consistent high-quality food production across all kitchen sections.
- Supervise, check, and correct food preparation and presentation.
- Maintain strict hygiene and food safety standards.
- Coordinate with kitchen staff for efficient operations.
- Assist in staff rostering and training.
- Manage stock levels and monitor food costs.
- Ensure all recipes and standards are followed.
- Foster a positive, team-oriented kitchen environment.
Requirements:
- Minimum 2 years experience in a Japanese restaurant or similar environment.
- Sashimi and Japanese cuisine knowledge required; tempura and robata experience advantageous.
