About Yamagen

About the Role

We are looking for a Sous Chef with sushi training and/or Japanese kitchen experience (tempura, robata) to join our dynamic team. The ideal candidate will have a team-first attitude, a passion for culinary excellence, and creativity to enhance guest experiences.

Position Overview

The Sous Chef will manage kitchen operations, oversee food production, ensure quality standards, and lead the kitchen team. This role requires a proactive leader who can bring innovative ideas and maintain high standards of food safety and hygiene.

Key Responsibilities

  • Ensure consistent high-quality food production across all kitchen sections.
  • Supervise, check, and correct food preparation and presentation.
  • Maintain strict hygiene and food safety standards.
  • Coordinate with kitchen staff for efficient operations.
  • Assist in staff rostering and training.
  • Manage stock levels and monitor food costs.
  • Ensure all recipes and standards are followed.
  • Foster a positive, team-oriented kitchen environment.

Experience and Skills

  • Minimum 2 years experience in a Japanese restaurant or similar environment.
  • Sashimi and Japanese cuisine knowledge required; tempura and robata experience advantageous.
