Seeking a highly skilled and experienced Executive Chef to lead our kitchen team at Lumiere Cafe in Surry Hills, NSW. The ideal candidate will have a minimum of 2 years of full-time work experience in a cafe, along with a Certificate in Food Safety and Hygiene. The salary range is $75,000-$78,000, depending on experience.

Key Responsibilities:

  • Develop and maintain a high level of operational knowledge of all recipes, standards, portion sizes, and presentation styles of dishes produced in the kitchen.
  • Collaborate with the management team to create menus that balance food and labor costs.
  • Monitor the preparation and presentation of dishes, discussing any food preparation issues with the manager and other staff.
  • Work with the management team to set daily and weekly production levels for the kitchen.
  • Maintain stock levels according to business requirements and understand the impact on food costs.
  • Implement and ensure compliance with food hygiene standards and health and safety requirements.
  • Check the freshness and quality of ingredients.
  • Ensure that food prepared in the kitchen meets the highest possible standards.
  • Supervise and train junior kitchen staff.
  • Handle food complaints efficiently.
  • Demonstrate strong organizational skills.
  • Prepare meat, sauces, and desserts as required.

Requirements:

Cert IV in Commercial Cookery or Hospitality, plus 2 years of full-time experience in Australia preferred.
