Junior Sous Chef

Our Junior Sous Chef will play a key role in supporting the Food and Beverage team at Mercure Perth. The successful candidate will be responsible for managing daily food preparation, production, and menu implementation to deliver innovative, safe, and high-quality cuisine.

  • Hands-on management of restaurant, room service, and conference food operations.
  • Collaborate with service teams to ensure consistent quality and service for guests.
  • Maintain food standards, preparation, presentation, and cooking techniques to meet brand guidelines.
  • Oversee kitchen operations in the absence of the Executive Chef.
  • Maintain hygiene and safety standards in line with Health and Safety and HACCP requirements.
Requirements:
  • Trade qualifications in cookery.
  • Previous experience in the hotel or hospitality industry.
  • Strong knowledge of food safety requirements.
  • Service-oriented with attention to detail.
  • Ability to work independently and as part of a multicultural team.
  • Strong communication, interpersonal, and time management skills.
