Culinary Team Member

We are seeking a skilled Culinary Team Member to join our team at InterContinental Sydney Double Bay. As a key member of our culinary team, you will play a crucial role in delivering exceptional dining experiences to our guests.

In this role, you will be responsible for preparing and presenting high-quality dishes to the highest standards. You will work closely with our Executive Chef and wider culinary team to ensure that every dish meets our luxury brand's expectations.

Responsibilities
  • Assist the Executive Chef to manage all functions of the Food Production and Stewarding operations to achieve optimal departmental profit.
  • Assist the Executive Chef in managing stocks of food, materials, and equipment, ensuring that they are sufficient in quantity and quality to meet hotel occupancy and function forecasts.
  • Set standards for all food and equipment purchases in accordance with IHG guidelines.
  • Monitor local competitors and compare their operations with our hotel's Food and Beverage operations.
  • Support the Executive Chef in participating in the preparation of the hotel's revenue plan and marketing programs.
  • Ensure that all food stock levels within food preparation areas are of sufficient quantity and quality to meet hotel occupancy and function forecasts.
  • Assist the Executive Chef in preparing work schedules and annual leave schedules within budget and business expectations.
  • Take a proactive approach in managing suppliers, obtaining quality products at the best possible price using the company ordering system.
  • Work with the Executive Chef to manage the department's expenses.
Requirements
  • Full working rights in Australia without restrictions.
  • At least two years' experience in a similar role.
  • Mandatory certifications include Certificate III in Commercial Cookery, desirably Certificate IV.
  • Possess a passion for providing luxury experiences and a commitment to exceeding guest expectations.
  • Ongoing availability to work flexibly as rostered, including nights, weekends, and public holidays.
  • Impeccable grooming standards and good personal hygiene.
  • An organized approach, ability to handle large amounts of information at once, and deal with various requests simultaneously.
  • Good communication and writing skills.
  • Physical fitness as you'll be on your feet most of the day, sometimes needing to lift, push, and pull objects up to 23 kg.
