Key tasks:

- Assist in designing seasonal menus that highlight locally sourced ingredients.

- Oversee the implementation and regular evaluation of the food safety manual to ensure compliance with legal standards.

- Prepare and serve meals that are both fresh and nutritious, with a focus on using high-quality local produce.

- Manage kitchen operations to ensure they are efficient, streamlined, and financially sustainable.

- Oversee food quality by sampling and inspecting both outgoing dishes and incoming ingredients to ensure they meet established standards.

- Seek out opportunities to reduce costs through minimizing food waste and encouraging recycling practices.

- Lead the recruitment, training, and development of kitchen staff.

- Conduct performance reviews and provide constructive feedback to support employee growth.

- Identify team members with strong potential and contribute to workforce planning and talent development strategies.

- Maintain clear and professional communication with the food and beverage department, collaborating closely with the floor staff to encourage teamwork and open dialogue.

Qualification & Experience:

- Must have commercial cookery qualification.

- At least AQF Diploma qualification in the hospitality management field.

- At least 3 years of experience in a similar role within the industry.

- Full Australian working rights.

- In-depth knowledge of food preparation, cooking techniques, and menu creation.

- Strong management skills in overseeing food ordering, cost control, and scheduling.

- Excellent attention to detail in monitoring dish quality from start to finish.

- Clear communication and problem-solving abilities when working with a team.

- Solid understanding of hygiene regulations and food safety practices.

- Experience in managing and developing staff within the kitchen environment.
