London’s award-winning hospitality studio, Studio Paskin, is expanding its portfolio with a new opening in the vibrant Sydney suburb of Paddington. With over 25 years of industry experience, they’re bringing one of their celebrated brands, The Palomar — proudly awarded a Michelin Bib Gourmand since 2014 — to our community.The Palomar’s menu draws from the rich and diverse culinary traditions of Southern Europe, North Africa, and the Levant – brought to life in an open kitchen centered around a wood fire grill, working with seasonal, locally sourced ingredients from small artisans and growers.

Complementing the restaurant is The Mulwray – Studio Paskin’s intimate wine and cocktail bar and another distinctive brand within the group. Merging indoor and outdoor spaces, the two brands will offer a vibrant, energetic experience where warm hospitality and guest experience are paramount.

Monica is our rooftop oasis brought to life by the visionary Carte Blanched hospitality studio. Embodying the rhythms and rituals of modern Sydney, viewed through a nostalgic 1960s Hollywood filter. This venue is a community beacon for inspired design, delicious drinks and relaxed luxury.

Job Description

We’re looking for passionate and skilled Chef de Parties to join our pre-opening team. Set to make its debut in Spring, we’re building a team who will take pride in creating amazing dishes across our venues. We believe that food is more than sustenance—it's a story, an experience, and a celebration. Take pride in putting care into every plate and create experiences that bring our guests back time and time again.

This is your daily contribution to turn our culinary experience into something exceptional ...

- Take ownership in your section, ensuring smooth service and maintaining the highest culinary standards;
- Execute the restaurant’s menu, balancing creativity, seasonality, and guest preferences;
- Maintain a consistent level of quality in food preparation, presentation, and taste;
- Supervise and mentor kitchen staff, fostering a positive and productive work environment;
- Ensure the kitchen adheres to all health and safety regulations;
- Work closely with the Restaurant team regarding availability of menu items and relevant changes;
- Maintain high levels of productivity while minimising waste.

Qualifications

We are looking for you – with personality and that certain something …

- You have at least 1 year of experience in a Demi Chef role within a hotel operation or independent venue;
- You have proven experience motivating a diverse kitchen team in a high-pressure environment;
- You have a strong focus on quality, cleanliness, and presentation;
- You possess thorough knowledge of food safety regulations and kitchen hygiene practices;
- You have strong communication skills and can collaborate effectively with front-of-house staff and other departments;
- You are able to remain calm and effective in a fast-paced environment.
