Located in the heart of regional New South Wales, our client, The Heritage Hotel Gladstone, stands as a proud symbol of local history and warm hospitality. Originally built in 1873, the hotel has been thoughtfully restored to offer a unique blend of heritage charm and modern comfort. As a central hub for both locals and travellers, it delivers an experience that is welcoming, authentic, and distinctly regional.

In true country spirit, the dining experience at The Heritage Hotel is rooted in community, generosity, and a passion for quality. To continue delivering this high standard, the hotel is seeking experienced Cooks and Chefs for multiple full-time positions at its Gladstone, NSW 2440 venue.

These roles offer a competitive annual salary ranging from AUD 70-80K, plus superannuation—negotiable for the right candidates.

Scope of the Work:
- The day-to-day operation of a busy kitchen, including delegating staff, stock rotation and relevant paperwork.
- Prepare and cook foods of all types, either on a regular basis or for special guests or functions.
- Determine production schedules and staff requirements necessary to ensure the timely delivery of services.
- Estimate amounts and costs of required supplies, such as food and ingredients.
- Inspect supplies, equipment, and work areas to ensure conformance to established standards.
- Monitor sanitation practices to ensure that employees follow standards and regulations.
- Analyse recipes to assign prices to menu items based on food, labour, and overhead costs.
- Collaborate with other personnel to plan and develop recipes and menus, considering factors such as seasonal availability of ingredients and the likely number of customers.
- Good knowledge of Occupational Health and Safety (WHS) AND HACCP
- Demonstrate new cooking techniques and equipment to staff.
- Preparing and ensuring a regulated oven, utensils, and grill for the shift
- Cooking order according to food health and safety standards
- Assisting other cooks in preparing food or helping other team members when needed

To be considered for this role, you should:
- Be willing to relocate if you are interstate or in other cities.
- Preferably have Certificates III & IV in Commercial Cookery
- Be available on both days at weekends and be able to work split shifts.
- Have at least 2- 3 years of work experience as a Cook/Chef.
- Ability to work in a team.
- Exceptional communication skills.
