About the Position The Chef role at Arte Bianca Double Bay is central to upholding our legacy of authentic Italian fare, where you'll lead the charge in crafting menus that blend time-honoured techniques with fresh, seasonal twists to delight our loyal takeaway customers. Encompassing everything from dough mastery in our wood-fired oven to seamless kitchen orchestration during peak evening rushes, this position demands a blend of culinary expertise and operational savvy to ensure every dish—from Margherita pizzas to rigatoni Bolognese—exudes quality and efficiency. By driving cost-effective preparations and fostering a hygienic, high-energy team environment, you'll play a vital part in elevating our neighbourhood gem, directly fuelling our reputation for heartfelt, accessible Italian excellence that keeps Double Bay coming back for more. Key Responsibilities Planning menus, estimating food and labour costs, and ordering food supplies Monitoring quality of dishes at all stages of preparation and presentation Discussing food preparation issues with Managers, Dietitians and kitchen and waiting staff Demonstrating techniques and advising on cooking procedures Preparing and cooking food Explaining and enforcing hygiene regulations May select and train staff May freeze and preserve foods Requirements Australian citizens and permanent residents are encouraged to apply. Certificate IV in Commercial Cookery or equivalent qualification. Minimum of 1 year relevant post-qualification experience, or 3 years if no formal qualification. Technical skills: Proficiency in wood-fired oven operations, Italian dough and pasta techniques, accurate menu costing, and adherence to HACCP food safety standards. Interpersonal skills: Excellent communication for team coordination, leadership to guide kitchen staff under pressure, and a collaborative approach to foster a positive, efficient workplace.
