About Carlotta

Carlotta is a distinctly Australian celebration of Mediterranean flavours and hospitality. We’re channeling the generous spirit of Mediterranean dining, giving a warm and vibrant nod to the trattorias and tavernas found dotted along the European coastline. Carlotta’s menu encourages shared feasting across an ever-evolving selection of antipasti, handmade pasta, and meat and seafood cooked over coals, with a custom-made wood oven from Naples taking pride of place in the kitchen.

About the Opportunity

We are looking for talented Chefs de Partie to join our team at Carlotta. Ensure the overall operation of your allocated section runs smoothly and effectively.

The Ideal Candidate Must Have

- Experience as a Chef in a premium a-la-carte venue
- Pasta and Grill section experience is advantageous
- Mediterranean cuisine experience highly regarded
- Strong culinary skills with an eye for detail and a passion for quality
- Ability to work efficiently in a fast-paced environment while maintaining composure under pressure
- Team oriented and strong communication skills
- A proactive attitude with a commitment to maintaining high standards
- Eye for detail and strong time management
- Knowledge food safety standards
- Genuine interest in the day-to-day operations
- Qualification in Commercial Cookery or equivalent
- Availability to work a rotating roster including weekends, public holidays, opening and closing shifts
