Kitchen Team Leader

Farro is excited to announce a new space in our growing family of restaurants and we are seeking dedicated kitchen members for our new Caulfield kitchen.

The Kitchen Team Leader is primarily responsible for his or her cooking station and coordinates the work of the other kitchen members to ensure that they deliver our food to our dedicated guests with consistent, reliable, and excellent quality. The Kitchen Team Leader is also responsible for delegating tasks, training, maintaining adequate inventory, resolving problems, and collaborating with other teams. Accordingly, the kitchen team leader is responsible for a variety of tasks. Ultimately, a top-notch Kitchen Team Leader at Farro should be able to train and guide other members of the kitchen team in line with our culture so that they too can grow and develop. The restaurant is open from Tuesday to Friday for dinner, and Saturday & Sunday for lunch & dinner.

**Roles/Responsibilities**
- Continuously ensure and review the delivery of excellent standards in the venue’s kitchen;
- Assist in building and retaining a strong, reliable and competent kitchen team;
- Provide assistance in training processes where appropriate;
- Delegate tasks and responsibilities to appropriate staff members;
- Provide appropriate input into the creation of recipes and menu concepts in collaboration with the kitchen team;
- Prepare and cook ingredients to deliver top-quality italian dishes (Pizza & Pasta), which includes being able to hand stretch pizza dough and operate a wood/ fire/ gas/ electric pizza ovens
- Effectively manage the food pass operation during service;
- Assist in placing orders for food stock and sundries where directed;
- Effectively assist in opening and closing the kitchen where rostered, creating prep lists for the following service, noting ordering requirements, and packing down the kitchen;
- Proficiently assist with sessions and events, i.e., set menus, canape functions, event days;
- Ensure the kitchen complies with WHS requirements and all other relevant regulations;
- Follow and comply with the Food Standards Australia and New Zealand Code;
- Assist in developing and maintaining relationships with suppliers and their representatives;
- Consistently demonstrate professional and operational development between performance reviews;
- Assist in addressing issues in kitchen standards audits;
- Assist in identifying operational and preventative maintenance issues;
- Maintain a high and consistent standard of product and personal presentation;
- Assist with identifying issues to support and address venue offerings and growth;
- Effectively collaborate with and take direction from the kitchen, venue and group management teams;
- Participate effectively in group training programs and initiatives as may be communicated to you from time to time for the purpose of team-building, career development and growth,
- and any other duties and responsibilities assigned or delegated to you from time to time and which are within your skills, qualifications and competencies.

**Qualification and Experience Requirements**
- AQF Certificate III and IV in Commercial Cookery or equivalent
- AQF Associate Degree or Advanced Diploma in Hospitality Management or equivalent
- At least two to three years of experience in a licensed restaurant setting. Will not consider experience gained from fast food outlets or casual café environments.
- Experience in Italian cuisine (Pizza & Pasta) highly desirable.

Part-time hours: 30-40 per week
