**Your Story**

As a **Boning Room** team member at Tibaldi you will be part of the **Fresh Meats** team based in Clayton, Victoria and will be involved in:
Bringing your hands-on approach along with strong knife skills and knowledge

Participating in job rotation and onsite training

Working in several different types of processing areas

Being an enthusiastic, self-motivated individual who thrives within a team environment

**Indicative Tasks and Duties’ include**:
Operating and maintaining butchering equipment, such as knives, saws, grinders, and slicers.

Selecting and preparing meat to produce choice cuts for the wholesale market or smallgoods.

Preparing meat for sale by removing bones, trimming fat and cutting, mincing and grinding meat to shape and size for display or as ordered.

Adhering to food safety and hygiene standards in the handling and preparation of meat products.

Preparing meat cuts, encompassing value-adding, marinating, seasoning, and curing special cuts, alongside tasks such as cutting, trimming, and arranging meat for sale and supply

Making seasonings and pickles by mixing spices, salt and other ingredients

Following occupational health and safety procedures to prevent accidents and injuries.

Operating sausage filling machines, smoking chambers, and cooking kettles and vats

Advising customers on the suitability and uses of cuts of meat and estimating food production costs

Butchering experience along with Certificate III or IV in Meat Processing preferred not essential will be highly regarded but not essential.

Please note that our butchers are expected to provide their own knives and steel. PPE will be supplied by Tibaldi.

- Day Shift 5:00am to 13:30pm
