We are a seven day a week entertainment venue with a range of racing and non-racing offerings including dining facilities, large function & conference rooms, 41 room four-star hotel, busy gaming lounge and sports bar & TAB.

Key Capabilities
Team Contribution
  • Assists and supports the Executive Chef
  • Build effective work relationships.
  • Work co-operatively with team members, contribute to team performance and demonstrate support for Melton Entertainment Park's commitment to a harassment free workplace.
  • Communicate with all staff in a courteous and professional manner.
Operations Performance
  • Adhere to Melton Entertainment Park Code of Conduct and Diversity policy
  • Adhering to Melton Entertainment Park values, policies and procedures, in particular, Food Handling and Hygiene Standards, Workplace Health & Safety, OH&S, Stock Control and Rotation
  • Participating in performance reviews according to Melton Entertainment Park policy.
  • Self directed learning and development as well as undertaking any required training.
  • Identify opportunities for continuous improvement in work processes and procedures and adapt to change in workplace practices.
  • Perform any other duty that may be reasonably regarded as relevant to the job as directed by management.
People Management
  • Lead by example and support all staff to conduct their day to day duties in a competent, friendly and efficient manner
  • Communicate Melton Entertainment Park's directions, strategies and goals
  • Promote teamwork, personal presentation and image
  • Recognise and commend good performance/results.
  • Assist senior management with identification of staff training needs and to formulate training and development plans
  • Identify unacceptable performance and carry out improvement plan
  • Maintain strong working relationships with other departments.
Key Qualifications

Key qualifications include but not limited to:

  • Certificate IV in Hospitality (Commercial Cookery)
  • Food Handlers Certificate
  • Detailed knowledge of professional kitchen standards
  • Delivery of great quality food across all departments.
  • Culinary Creativity and menu design
  • Hands on chef with the ability to cope with the rigours of shift work
  • Effective team player with a friendly nature
  • Assist Exec Chef to review and monitor supplier cost and quality
  • Able to successfully manage a large-scale bistro and functions operation
  • Capable of assisting Exec Chef with maintaining food budgets
  • Knowledge of ordering and stock control
  • Assist with recruitment, supervision and training of cooks and kitchen staff
  • Focused attitude towards customer service
  • High level of personal grooming and hygiene standards
Availability

Must be available to work a rotating roster including days, nights, weekends and all major events.
