About the Role:
As the Sous Chef at SkyPoint, you’ll be the driving force behind our kitchen operations, shifting between our iconic buffet breakfast, busy Bistro kitchen, and high-end events ensuring every dish not only meets but exceeds our high standards of quality and presentation. You'll work closely with our Executive Chef to develop innovative menus and set the stage for unforgettable events. This role is perfect for a hands-on leader who is passionate about food, committed to excellence, and ready to inspire, coach and develop a talented team. Your expertise will play a key role in maintaining the efficiency, profitability, and creativity of our offerings, making you an integral part of SkyPoint’s success. Some of the key responsibilities of the Sous Chef at SkyPoint include: 

  • Manage a talented kitchen team, ensuring that our kitchen operations run like a well-oiled machine. You'll play a pivotal role in crafting an Inspiring and professional team environment.
  • Work hand-in-hand with our Executive Chef to develop mouth-watering menu strategies, perfecting every dish from event menus to daily delights.
  • Keep our kitchen running efficiently and profitably. You'll monitor and control labour costs, support in rostering, and oversee adherence to food safety standards. Your eye for detail will help us maintain the highest quality and hygiene standards.
  • Provide adequate supervision, instruction and training to ensure the team have the knowledge and skills required to undertake their work duties safely and in a manner which minimises risk to the environment.
  • Assist with facilitating and monitoring the implementation of the HACCP System and associated policies, procedures, guidelines and programs to maintain our 5 star Eat Safe rating. 

About you: 

  • Trade Chef qualification and Food Safety Supervisor certificate, with at least two years of experience as a Sous Chef or in a similar role.
  • Demonstrated working knowledge and understanding of Workplace health & Safety and HACCP food safety practices and compliance.
  • Proven ability to lead, motivate and inspire a team.
  • Advanced knowledge in food costing, budget management and cost control.
  • Success in creating and maintaining high standards of excellence in food preparation and presentation.
  • Experience in a high-volume environment as well as functions is desirable.
