About the Role

We are seeking a highly skilled and experienced Sous Chef to join our dynamic kitchen team at SkyPoint, the iconic Gold Coast destination renowned for its breathtaking views and exceptional events.

Key Responsibilities
  • Manage a talented kitchen team, ensuring seamless execution of our kitchen operations, including our iconic buffet breakfast, busy Bistro kitchen, and high-end events.
  • Collaborate with our Executive Chef to develop innovative menus, perfecting every dish from event menus to daily delights.
  • Oversee kitchen efficiency and profitability, monitoring and controlling labour costs, supporting in rostering, and ensuring adherence to food safety standards.
  • Provide expert supervision, instruction, and training to ensure the team has the knowledge and skills required to undertake their work duties safely and effectively.
  • Assist in implementing and monitoring the HACCP System and associated policies, procedures, guidelines, and programs to maintain our 5-star Eat Safe rating.
Requirements
  • Trade Chef qualification and Food Safety Supervisor certificate, with at least two years of experience as a Sous Chef or in a similar role.
  • Demonstrated working knowledge and understanding of Workplace health & Safety and HACCP food safety practices and compliance.
  • Proven ability to lead, motivate, and inspire a team.
  • Advanced knowledge in food costing, budget management, and cost control.
  • Success in creating and maintaining high standards of excellence in food preparation and presentation.
