About Society:
Grand yet intimate, Society has 180-degree views over Collins and Exhibitions Streets encompassing distinctly dining experiences – the Society dining room, customised private dining, the Lillian Terrace and a luxurious lounge bar with each space remaining independent in menu offerings. Situated at the centre of a globally recognised destination for fashion, the arts and commerce, combining international appeal with a distinctly Melbourne identity, the historic 80 Collins building will usher in a new era for LUCAS Restaurants.

Main Role Responsibilities:

  • Assist senior chefs with the day to day operations of the kitchen utilizing your skills & experience
  • Use correct techniques and follow procedures and recipes when preparing and cooking menu items
  • You will be responsible for ensuring that your section and team operates to optimum efficiency
  • Organizing, supporting and coaching the team to Lucas Restaurants’ standards

Experience, Skills & Attributes:

  • Demonstrated experience as a Chef de Partie in a premium restaurant
  • Knowledge of local and global cuisine trends
  • Exceptional communication and immaculate presentation
  • Ability to build and maintain effective relationships
  • Demonstrated ability to work autonomously and lead a team
  • Demonstrate positive attitude and genuine interest in the day to day operations
  • Understanding of Food Safety and OH&S standards and compliance
  • Experience in effectively maintaining and managing set ups, changeovers, closedown and handover to standard
  • Excellent attention to detail
  • Outstanding time management during preparation and service periods
  • Calm and composed demeanour
  • Qualification in Commercial Cookery or equivalent experience
